How-To Request: Decommission exchange 2003

Hi All,

We have recently moved to a hosted exchange server with a 3rd party and I am after some information (ideally a how-to guide) on decommission Exchange 2003 completely from the network.
The information I have found online is based on a different scenario, where people have upgraded to 2010 and are look into removing 2003 on the network.

In my case, all server information needs to be removed from the network and in Active Directory, as well as all the mail stores eventually leading to physically removing the server from the rack forever.

What is the best way to remove all traces of the exchange 2003 server?

So far all Exchange services have been disabled and I will disable the NIC's to ensure the users are not using the server for anything else.

After which I will re-enable the network cards and work on the decommissioning.
