Second internal email server

We are being asked if we can configure a second email server.

This single AD domain is on 2 continents linked by a VPN.

All users' mailboxes are stored here in the UK on the mail server which is running SBS2008 installed with Exchange 2007.

The HK server is also a DC running Windows Server 2012 currently running only file/print services and local auth.

The UK users are all using "@company.co.uk" and the HK users "@company.com.hk"

As the link between is getting rather slow so we are thinking of installing Exchange on the HK server.

Would we be able to install Exchange 2013 onto the new server to host the mailboxes and public folders for only the HK staff ?

In fact are we even able to have more than one public folder store ?

Is this task a complete no-go due to problems with 2007<>2013 interacting or should we look at replacing the SBS with 2012...
