We run a number of SBS 2011 boxes with Exchange 2010. Using the wizard in the SBS console I've been able to install a simple SSL and then have a functional email server with the OWA site secured.
Whenever I've installed Exchange 2010 or 2013 alone the subject of UCC certificates comes up. While this is useful for connecting clients outside the network with auto discover it seems like overkill.
Have other people been able to use simple SSL certificates in Exchange 2010/13? Do you use self-signed certificates for connecting local clients? The add Exchange certificate in Exchange 2010 does prompt for the alternative domains. In generating a CSR do you just delete the alternative names?
